Sounds pretty good. Can you overnight me your leftovers?

I spend 8 hours a day at work cooking and baking, I'm not much for doing it at home :-)

I'm a big fan of Vietnamese food myself. I have a feeling the typical Twin Cities variety of this ethnic food group is a bit different than what you get in California. In Saint Paul, in particular, there is a very high concentration of Hmong people, and I think their culture influences the local SE Asian cuisine. I often eat a meatball and rice stick soup for lunch - the best way to spend 4 bucks on lunch near the University of Minnesota main campus where I work. It's called Pho Bo Vien. Sometimes I get it with shaved beef, too: Pho Tai. They also have a nice lemon grass chicken dish, which I think might be similar to your recipe. My wife and I have another favorite Vietnamese place where the spring rolls are out of this world. It's such nice simple, fresh food. I really like that style.

Your recipe sounds tasty. I'll give it a try in the near future and let you know how it turns out.
